5. ANALISYS OF THE COOKING PROGRAMMES:

Cooking is divided into 5 steps.
Rise in the temperature and steam generation (Step 1)
Immediately after starting, the valve, the tangential fan, the heater, the heating cover and the thermal
activator are supplied.
The steam generation is important in order to quickly obtain saturation in the cavity. The valve is supplied by
step of 15 to 30 sec as soon as the generator temperature exceeds 130°C. The heating cover is supplied to
avoid condensation and the tangential fan runs in order to prevent an abnormal overheating of the oven and
the electronics. When the cavity reaches the temperature selected the generator stops heating.
Upholding of the steam level (Step 2)
The heat generator is regulated by the sensor. The thermal activator, the heating cover and the tangential
fan are still supplied.
Steam emptying and temperature decreasing (Step 3)
Three minutes before the end, the thermal activator and the solenoid valve are not supplied any more.
The valve opens, the tangential air flow involves the steam out of the cavity.
The heating cover is always supplied.
Keeping warm (Step 4)
This step takes place only if the door remains closed after the end of cooking. This phase permits to keep
food warm.
The tangential and the heating cover are always supplied. The maximum duration is 1 hour and it is interrupted
as soon as the door is open.
Cavity drying (Step 5)
This step starts as soon as the door is open or after 1 hour or during the phase 3 or the phase 4 and
continues during 3 minutes.
The tangential and the heating cover are supplied. The air flow goes on involving the steam out of the cavity.
The duration is 3 min.
