Stage B - Thoroughly Sharpening the Edge Note: Do no use stage B for serrated knives, as this will remove too much metal from the serration. Sharpen the blade in stage B by using the same procedure as described in the section Sharpening Blades. When detecting a burr along one side of the edge, process the knife in stage C once to remove the burr.
To check for the burr, move your finger carefully and without exerting pressure from the back of the blade across the blade to the edge as shown in the illustration. The burr will be a rough protrusion on one side of the edge, whereas the other side is feeling smooth.
