Become familiar with the various parts of the deep fryer (Fig. A) and read the instructions carefully.
Wipe the fryer cover and cool-touch base with a damp cloth.
To avoid electrical shock, never immerse the fryer base, cord, or plug in water or other liquid. Never wash the cover or fryer base in a dishwasher.
Open the deep fryer cover by pushing the cover release button on the front of the fryer.
Remove the frying basket, basket handle, charcoal filter, and any packaging material from the deep fryer. Then lift the removable pot out of the fryer base.
Wash the basket (with the handle removed) and removable pot in hot, soapy water; rinse and dry thoroughly. Washing these parts in a dishwasher is not recommended; see "Care and Cleaning" for specific cleaning instructions.
NOTICE: If you choose to wash the removable pot in a dishwasher, it will likely discolor due to the caustic nature of the dishwasher detergent.
After cleaning, place the removable pot back in the fryer base. The terminal pins on the bottom of the removable pot fit in the receptacle inside the fryer base (Fig. B).
For easiest alignment, position the pot in the base so the ▼ on the front of the pot aligns with the front seam of the unit (Fig. C). Then tilt the pot forward slightly and push pot down into fryer base. If the cover closes, the pot is in the correct position.
The charcoal filter, which is located in the cover of the deep fryer, will help absorb unpleasant odors. For the deep fryer to effectively absorb these odors, always use the fryer with the filter in the cover.
To install or replace the filter, first close the fryer cover. Then, remove the filter cover (Fig. D) by pushing the release latch toward the window and lift up on the back of the filter cover.
If replacing an old filter, remove and discard it. Unwrap new charcoal filter and insert it in the filter compartment. Replace the filter cover and snap into place by pushing down. Replacement filters may be purchased through the Presto Consumer Service Department (see back cover).
Before using the deep fryer, you will need to attach the basket handle to the basket. Follow these steps:
Failure to securely attach the basket handle can result in the release of the basket during use, which may result in severe burns.
For instructions on positioning basket in fryer, see step 3 in "To fry" section.
The magnetic cord assembly was designed to detach easily from the fryer. As a result, if bumped or touched during use, it could detach, causing the unit to stop heating. Avoid contact with the magnetic cord assembly during operation. If contact occurs, verify it is still properly connected.
To prevent risk of severe personal injury or property damage, use caution when frying with hot oil.
Even though the fryer has a special cool-touch exterior, the interior of the fryer is extremely hot. To avoid burns, do not touch the interior.
It is normal for steam to escape from the cover vents during frying. To prevent steam burns, keep well away from the vents.
NOTE: High moisture foods, such as french fries, produce more steam than other foods. The fryer is designed to ensure that excessive moisture does not remain in the fryer. Thus, when frying moist foods, you may see beads of condensation on the exterior of the fryer. This is normal.
After frying foods, allow oil to cool. To strain oil for reuse, place a funnel into the original oil container or other airtight container and line the funnel with a filter or a double thickness of cheesecloth. Slowly pour the oil into the funnel. Store the oil in a cool, dark area.
The number of times the oil can be reused will depend on the type of oil used and the food that is fried in it. For example, the oil will need to be replaced more often if fish or food coated with bread or cracker crumbs is fried frequently. Replace the oil if it is dark in color, has an unpleasant odor, smokes when it is heated, or foams excessively during frying.
How do I know the removable pot is installed correctly?
If you are able to close the fryer cover tightly, the removable pot is installed correctly. If the cover does not close, reposition the pot following the instructions in "Positioning removable pot in the unit base".
Sometimes my fryer won't heat up or it stops working while I'm frying. Why?
If your fryer fails to preheat or if the frying process stops while you are frying, check the magnetic cord assembly to assure the magnetic plug end is properly attached to the appliance (Fig. I).
The basket is probably not positioned correctly in the fryer base. If you look at the basket handle, you will notice a long groove on each side of the handle. These grooves need to be lined up with the slot guides on the fryer base (Fig. J and K). This enables the basket to be lowered partially into the fryer. The basket lowering button is then used to lower the basket the rest of the way into the hot oil. If the handle is not positioned correctly in the slot, the basket lowering button will not function.
Whenever I make battered foods, they stick to the basket. What can I do?
Battered foods work best when fried without the basket. When using the fryer without the basket, a slotted heat-resistant scoop may be used to add or remove foods. These heat-resistant scoops may be purchased on the web at www.GoPresto.com. If, however, you want to use the basket, lower the basket into the oil before placing battered foods in the oil.
My food doesn't get as crisp as I'd like or is unevenly cooked. What am I doing wrong?
You may have overfilled the fryer. If too much food is fried at the same time, the food will not get crisp. Do not fill the basket more than ⅔ full for most foods. For homemade fries, fill the basket only ½ full. If your food is unevenly cooked, you may be frying foods that are not uniform in thickness or size. Try frying foods of equal size and thickness as they will fry more evenly and at the same speed.

The following times are approximate and based on the maximum recommended amounts of food. Fill the basket no more than ⅔ full for most foods. When frying homemade fries, fill the basket only ½ full.

*Fresh and raw battered foods will stick to the wire mesh of the basket; therefore, it is suggested you place them directly into the oil using a long-handled scoop or tongs.
Peel medium potatoes, if desired, and cut into ¼ to ½ inch thick strips. Place into large bowl and cover with hot tap water. Soak potato strips for 15 minutes or until ready to fry. Rinse, drain, and pat dry with paper towels. Because uncooked potatoes contain a high percentage of moisture, extreme care must be used when deep frying. Thoroughly dry potato strips before frying.
Fill the basket ½ rather than ⅔ full. Keeping the cover open, lower the filled basket slowly into the hot oil. If the oil starts to boil up too quickly, lift the basket out of the oil for a couple of seconds. Then lower again. Repeat as necessary until the basket is completely lowered into the fryer. Close cover.
Fry at 340° for 6 to 7 minutes until fries are cooked through but not browned. Drain; let stand to cool for at least 10 minutes, but not more than 2 hours. Just before serving, fry potatoes at 375° for 10 to 12 minutes or until golden brown.
