SMOKING MADE SIMPLE

Cold smoking is a method of smoking that has an ancient tradition. It is used to preserve and flavour foods and has historical value. Smoking destroys germs and reduces the available amount of water, meaning that it can bind to other molecules in the food through dehydration. This allows the food to keep for longer. Smoking also gives the food a typical colour and aroma.

COLD SMOKING

Cold smoking refers to smoking with a cooking chamber temperature between 15-25°C. Cold smoking is used to flavour and preserve certain foods, such as fish, ham or cheese. As this temperature is very low, cold smoking is generally a very long process. It gives the food a mild, pleasant smoky flavour and can also be used to flavour cocktails.

WARM SMOKING

During warm smoking, the cooking chamber temperature is between 30-50°C. The higher temperature causes the food to begin cooking after a short time, which is why this smoking method also takes less time than cold smoking. Gammon steak, for example, is produced using the warm smoking method.

HOT SMOKING

Hot smoking generally refers to smoking with cooking chamber temperatures of 55-120°C. As the temperatures are within the classic range of slow roasting and low & slow BBQ, this method is mainly used when the food is to be consumed immediately afterwards. Meat, fish and vegetables can be smoked and cooked within a few hours using this method.

BEFORE FIRST USE

INSERT THE BATTERY

The battery is supplied separately and must be inserted into the base.
To do this, open the battery compartment in the bottom of the base.
Connect the cable using the plug and insert the battery into the housing as shown in the diagram. Close the battery compartment again.
You can now charge your Smoke cold smoke generator fully using the charging cable supplied. See section "BATTERY" in this documentation.

A charging cable with a type C plug is supplied.

Capacity maximum level: approx. 5 hours

TIP: Regular use extends the battery service life.

Please refer also to the information in the separate assembly instructions for your Smoke cold smoke generator.

NOTE: Make sure that the Venturi pipe is positioned correctly.

EXPLANATION OF THE OPERATING CONSOLE

The smoke intensity can be set to any level you wish.

OPERATING THE SMOKE COLD SMOKE GENERATOR

SETTING UP THE SMOKE COLD SMOKE GENERATOR

  1. The stainless steel pipe is supplied ready for use.
  2. Fully charge the battery in the base (charging time approx. 8 hours).
  3. Attach the stainless steel pipe to the base. Make sure that it sits correctly in the base and is locked into position. Listen out for a click.

  4. Define your desired smoking chamber (e.g. kettle barbecue, gas station, smoking oven).

  5. Cut the silicone hose to the desired length with scissors.

    NOTE:
    The ideal length is the most direct route from the Smoke cold smoke generator to the smoking chamber inlet. Make sure there is a slight, even slope.
    Exception: Short, intensive smoking with the OUTDOORCHEF kettle barbecue.
    NOTE:
    Fill the smoking wood chips loosely. Do not pack the smoking wood chips down, otherwise it cannot be guaranteed that the smoking wood chips will slide down.
    NOTE:
    To ensure clean burning and functioning, please only use smoking wood chips measuring 3-10mm.
    We recommend the OUTDOORCHEF Smoke smoking wood chips.
  6. Remove the lid and fill the stainless steel pipe with OUTDOORCHEF smoking wood chips for Smoke.

    When the stainless steel pipe is completely filled, you can smoke at a moderate smoking intensity for approx. 1h 15 min.
  7. Replace the lid.

SWITCHING ON THE SMOKE COLD SMOKE GENERATOR

NOTE:
During the smoking process, make sure that the smoking wood chips slide down. It is possible for the chips to become stuck due to their shape and structure. If the chips do not slide down cleanly, you can rectify this by tapping lightly on the pipe.

The pipe is hot.

IGNITING

  1. Make sure that the lid is in place, as this is required to create the vacuum in the stainless steel pipe.
  2. Switch the Smoke cold smoke generator to the highest level (max).
  3. Ignite the smoking wood chips through both igniting holes, approx. 5-10 seconds per hole.

SMOKING


Do not expose yourself or other people to the smoke. Danger of poisoning due to the smoke gases.

  1. Allow the smoker to run at the highest level for the first 1-2 min.
  2. Then adjust the intensity to your desired smoking level.

HINWEIS:
Condensation and resinous smoke deposits are created during burning.
Ensure they can drain away by providing an even slope from the Smoke cold smoke generator to the smoking chamber.
A backflow of condensation water and smoke deposits can block the silicone hose.

NOTE:
The shorter the hose, the less condensation forms.
NOTE:
The humidity and weather have a great influence on condensation formation. The more moisture there is in the air, the more condensation forms.

SMOKING WITH THE KETTLE BARBECUE

For smoking in the OUTDOORCHEF kettle barbecue, we recommend a connection using the following three accessories from the SMOKE kettle barbecue adapter set (not supplied).

ACCESS FROM BELOW VIA THE ADAPTER

Ideal for low & slow smoking. It is possible to fill the stainless steel pipe up to max. 5 times per smoking process.

Ensure there is an even slope in the silicone hose; no siphon may be formed. If installed correctly, the condensation drips through the adapter directly into the drip pan.
TIP:
Fill the collecting tray with OUTDOORCHEF Grill Powder. The OUTDOORCHEF Grill Powder absorbs the condensation including smoke deposits, which makes disposal and cleaning easier.
TIP:
The OUTDOORCHEF expansion & filling aid for SMOKE makes it easier for you to fill the stainless steel pipe. It also offers you longer smoking without topping up the pipe, up to approx. 5 hours.

ACCESS VIA THE LID

Ideal for short and intensive smoking. The stainless steel pipe is filled a maximum of once per smoking session. The temperature in the kettle may not exceed 180°C when used in this way.

In this case, a backward slope from the smoking chamber (kettle) to the Smoke cold smoke generator is unavoidable.
The condensation runs back into the appliance and collects in the silicone base.
As a result, we recommend that the stainless steel pipe is filled a maximum of once for this type of smoking.
TIP:
We recommend attaching the hose with the bracket on the left-hand side of the kettle.

Here, too, make sure there is a slope from the Smoke cold smoke generator to the smoking chamber.

FLAP

To increase the smoke intensity in the kettle, you can close the air slot on one side of the lid using the flap. The temperature in the kettle may not exceed 180°C when used in this way.

Never close all of the air slots; this can lead to flashbacks or a fire.

SMOKING WITH THE GAS STATION

To smoke with a gas station, we recommend guiding the smoking hose into the barbecue chamber via the side opening in the rotisserie spit bracket. Make sure once again that the hose slopes away from the cold smoke generator.

TOPPING UP THE SMOKING WOOD CHIPS

If you need to fill the stainless steel pipe more than once for smoking, top it up with smoking wood chips as long as there are only a small number of chips left in the pipe. To do this, lift the lid and carefully fill the stainless steel pipe with the OUTDOORCHEF smoking wood chips.
To make filling easier and to smoke without topping up, we recommend the OUTDOORCHEF expansion & filling aid for Smoke.


The pressure that can be created by filling may cause individual pieces of embers or ash to fall out of the igniting holes. Therefore, make sure that you are standing on a fireproof surface and be careful not to burn yourself.

The stainless steel pipe is very hot; wear protective gloves. There is a risk of burns. We recommend wearing the OUTDOORCHEF leather glove.

AFTER USE

  1. Allow all of the parts to cool down.
  2. Clean the Smoke cold smoke generator – See section "CLEANING AND STORAGE" in this documentation.
  3. Fully recharge the battery.

CLEANING AND STORAGE

CLEANING


Only clean the Smoke cold smoke generator when it has cooled down completely.

Wear disposable gloves and an apron when cleaning the Smoke cold smoke generator. The resinous smoke deposits leave stubborn stains on the skin and in textiles.
Residues in the hose can drip out and soil the floor or clothing.
The Smoke cold smoke generator should be cleaned thoroughly after every use. Resinous smoke deposits are created during burning. Humidity and the weather influence the extent of the deposits. The more moisture there is in the air, the more deposits are created.

Recommended cleaning:

  1. Detach the stainless steel pipe from the base.

  2. Remove the lid and empty residues in the stainless steel pipe into a fireproof container.
  3. Remove the silicone base.
    To do this, hold the stainless steel pipe in one hand and carefully pull the silicone base with the other hand.

    The silicone base can contain resinous smoke deposits.

    The nozzle is small and easy to lose.
  4. Pull the ember holder out of the stainless steel pipe, the best way to do this is with the multitool supplied.

    The bayonet lock may have sharp edges, wear protective gloves.
  5. Clean all parts with the OUTDOORCHEF barbecue & cold smoke generator cleaner, the OUTDOORCHEF cleaning brush for Smoke and the OUTDOORCHEF cleaning cloths. You can remove encrustations in the silicone base with the multitool.

  6. Put the stainless steel pipe back together again – See section 4 in this documentation.
    information To clean the stainless steel pipe, we recommend the OUTDOORCHEF barbecue & cold smoke generator cleaner, the cleaning brush for Smoke and the set of 2 cleaning cloths.
    TIP:
    The smoking residues in the silicone base and hose can be removed much more easily when frozen. Place the silicone base and hose into the freezer for a few hours and then knock the residues out of them.

DISCOLOURATION

The heat will result in the formation of areas of iridescent bright discolouration on the surface of the stainless steel pipe. This discolouration is characteristic of stainless steel and has no effect on the quality or functionality.

SMOKE RESIDUES IN THE BARBECU

The smoke also leaves behind a smoky odour in the smoking chamber (barbecue chamber). You can remove this by heating to the max. temperature within 10 min.

STORAGE

A sealable zipped bag is supplied. We recommend you store the Smoke cold smoke generator and all of the accessories in it after use and cleaning to prevent the unwanted spread of the smoky odour. Only seal the bag when all of the cleaned parts are completely dry.
Always store the Smoke cold smoke generator in a dry and protected place.

TROUBLESHOOTING

Smoking wood chips cannot be ignited

  • Check whether all of the parts are clean and functional.
  • Ensure that you are using dry smoking wood chips.
  • Check that the lid is in place and that the Smoke cold smoke generator is not drawing in false air.
  • Check whether the generator pump is working and air is flowing through the nozzle.

Smoking wood chips do not slide down

  • Check whether there is any residue from the previous fire in the pipe and remove this.
  • Ensure that you are only using OUTDOORCHEF smoking wood chips.

No power or reduced power

  • Check whether all of the parts are clean and functional, remove any blockages.
  • Check whether the battery is charged.
  • Check the lid, it must lie cleanly on the pipe.
  • Check whether the hose has a slope and any condensation can drain away.
  • Check whether the silicone base is full and needs to be cleaned after being used for too long.

Please contact the retailer if you are still unable to operate the Smoke cold smoke generator after carrying out the actions listed above.

The folding silicone funnel makes it easier for you to fill the stainless steel pipe and also offers the possibility of expanding the amount of smoking wood chips to the amount that would fill the stainless steel pipe (750g) five times.

OPERATION

Follow the assembly instructions exactly. Incorrect assembly can have dangerous consequences.
Please read these instructions carefully before using your OUTDOORCHEF Smoke cold smoke generator. The Smoke cold smoke generator is for outdoor use only and a safety clearance of at least 1.5 m from flammable objects must be ensured.

Use the Smoke cold smoke generator outdoors only. Never use indoors, e.g. in garages, buildings, tents and other enclosed areas. Danger of poisoning due to the smoke gases.

This appliance must be kept away from flammable materials during use.

Only use the Smoke cold smoke generator on a level, firm and non-flammable surface.
Never place the Smoke cold smoke generator on wooden floors or other flammable surfaces while it is in use.
Keep the Smoke cold smoke generator away from flammable materials.

The Smoke cold smoke generator becomes very hot when in use. Always wear protective gloves and only touch the plastic handle. There is a risk of burns. We recommend you use the OUTDOORCHEF leather glove.

When in use, glowing sparks may escape due to the smoking wood chips sliding down. Never leave the Smoke cold smoke generator unattended during operation.

Never leave the Smoke cold smoke generator unsupervised during operation.

Do not move the appliance during us.

The Smoke cold smoke generator may not be used in windy conditions as there is a risk it could tip over.

Do not expose yourself or other people to the smoke; danger of poisoning due to the smoke gases.

Due to the production process, the edges of the pipe may be sharp; please always wear gloves during assembly and disassembly.

Accessible parts may be very hot. Keep children away.

The Smoke cold smoke generator remains hot for quite some time after being switched off. Ember residues can continue to glow for a while. Make sure you do not burn yourself or allow any objects to come into contact with the Smoke cold smoke generator due to the danger of burns.

Wear protective gloves when touching hot parts.
