Principles of Pressure Cooking
Under normal conditions, water boils
at a temperature of 100°C (212°F). This
temperature is dictated by atmospheric
pressure and cannot increase no matter
how long boiling continues.
The weight on your Pressure Cooker
increases the pressure inside the cooker
which in turn raises the temperature
at which the liquid boils. The result is
faster cooking times because of the
higher temperature obtained and at the
same time the steam is forced through
the food, cooking and tenderizing it.
