  • Page 4 The grind To make a good espresso you need a grind that gives 25 ± 2.5 mm of beverage in 25 ± 2.5 seconds: so, if it takes more or less time to make this amount of espresso, the grind is not set correctly.
  • Page 5 Adjusting the grind Until now, to achieve a good grind, the barista had to make a series of ballpark adjustments. Very often this empiricism deteriorates to the point where the barista cannot control the results and blames the bad quality of the espresso on the malfunctioning of the coffee machine and/or the grinder.

  • Page 19 – Grinder-doser The automatic grind corrections are made with an electrically motorised worm screw and magnetic sensor. This incredibly precise mechanism is designed to register grind size; it can ensure distances between the 2 grinders at increments of 0.005 millimetres for each control point.

  • Page 26 Flow Control Algorithm – Instructions on the side of the machine The heart of the PGS is based on a specific control algorithm which has been entirely designed and developed in-house at Gruppo Cimbali. • The algorithm uses the flow rate Q as the control parameter during use Q = (0.5*V) / T [ml/s]...
  • Page 27 Flow Control Algorithm – Instructions on the side of the machine • During the grinder-doser installation phase, it is very important to perform a precise calibration of grind levels and quantities of coffee to be ground. This must be done by qualified installer.
  • Page 28 Flow Control Algorithm – Instructions on the side of the machine • The sophistication of the control algorithm makes it possible to define the extent of grind corrections in order to accelerate the grinder-doser adjustment process in case a considerable change is required in the grind. •...
  • Page 29 Flow Control Algorithm – Instructions on the side of the machine • After each grind adjustment, the dose of a double espresso and single espresso is increased/decreased automatically according to the percentages entered by the technician. • If this auto-adjustment were not performed, an increase or decrease in the adjustment of the grind would trigger an increase or decrease in the quantity (grams) of ground coffee.
  • Page 30 Algorithm for Flow Rate Control It is critical to point out some situations (the most common ones) that occur while dispensing double espressos which the algorithm does not calculate. • If two single doses are ground one after the other in a double filter, the algorithm will not calculate the flow rate, even if the key to dispense the double espresso is pushed.

  • Page 32 Touch Screen The right balance between a blue-backlit, LCD display (128 x 64 pixels) and "custom" Touch Screen (45 x 27 mm) makes the most of every available surface, ensuring simple, versatile and comprehensive operation while maintaining a cost/benefit ratio that is spot- on for this product’s target market.
  • Page 33 Manual grind adjustments The motorised grinder-doser movement system does not have a handle to regulate the size of the grind. Instead, the technical menu has a specific menu dedicated to manual grind adjustments Using the two dedicated buttons the technician can adjust the grind with a numerical confirmation on the display.

  • Page 36 Push-button panel The “Touch Screen” is equipped with 2 dose selection buttons, one for continual supply ON/OFF; it can also be programmed for a third dose. The flashing key indicates the preselected or activated dose. The other two keys are for programming.
  • Page 37 Start up Switch: for an easy and comfortable start-up of the grinder using a pressure filter holder, can be used in the “preselected” mode. The pressure of the filter holder on the switch acts on a photocell sensor which is impervious to mechanical wear even after countless activations.

  • Page 53 What are the Advantages of MD3000 O.D. BT ? Automating the grinder adjustments has the significant advantage of eliminating - or reducing as much as possible - service calls required to ensure coffee quality. This avoids maintenance by the barista, but above all those service calls by specialised technicians following up on a maintenance request because of an assumed technical problem.
