STARTUP PREPARATION Your dough press is designed for easy use and operation to reliably press dough balls. Thickness, shape, and size are directly related to your dough ball, its shape, the temperature of the dough, the recipe of your dough, type of lubricating food oil, as well as the settings of your machine. -
Page 4: Setting Temperature
SETTING TEMPERATURE ADJUST TEMPERATURE: Set the desired temperature for your press by following the instructions for the specific version of your press. A temperature indicating alarm will sound once the set temperature has been reached. Temperature settings very for differnent types and recipies of dough. As a general rule, pressing with a temperature setting of 110°-130°F for room temperature pizza dough and 140°-150°F when using refrigerated dough will produce desireable results. -

SETTING CYCLE TIME The required time for pressing dough will depend on the temperature of the dough when pressing as well as the type and recipe of the dough and the set temperature of the press. Separate times will need to be determined for varying thicknesses and dough ball sizes. As a general rule, pizza dough at room temperature can be pressed for 3-10 seconds to achieve desirable results. -

THICKNESS ADJUSTMENT With the press in the open position, adjust the press to the desired thickness by turning the thickness control knob located at the top/rear of the machine. Thickness is reduced by turning knob clockwise and increased by turning it counterclockwise as indicated below. Thickness setting should be set so that the heat head will lock down firmly with your product in place. -

MACHINE PRESETS PRESET QUANTITY Temperature presets can be stored in the memory for different transfer settings. By default two presets are displayed. This setting can be adjusted to display four presets. CYCLE COUNT The cycle count feature counts the number of cycles that the machine has undergone. A cycle is counted every time the countdown timer is activated by closing the press. NOTE: The cycle count will maintain the total count even if the power has been turned off. -
