These plugs control which side of the flue pan the fresh sap enters and which side of the syrup pan will be the finishing side. The diagrams below illustrate the two possible flows in the pan set. NOTE: Hydrometers from Leader Evaporator by law are calibrated by the State of Vermont. . The HOT and COLD test lines should be considered guidelines.
