    INSTALLATION INSTRUCTIONS Installation and adjustment operations are to be carried out by qualified personnel according to the norms in force. (See technical specification table I). WARNINGS: - If the oven is installed against a wall, the wall needs to withstand temperatures of 80°C and must be incombustible. - Inlets (water and electricity) and outlets (waste water, steam etc.) are signalled by dedicated tags.

    COLD WATER CONNECTION (SOFTENED) Water pressure min. 120 kPa max. 400 kPa (1,2 < PH O < 4 bar). The water inlets (Fig.1 Pos. A) must be connected to the diluted feeding system at a max. temperature of 50°C through shut-off cocks, to be closed when the equipment is not working or during maintenance operations.

    ELECTRICAL CONNECTION - The electrical connection must be carried out by qualified authorized personnel only, in compliance with the regulations in force. Check the data reported in the technical data Table on page 4 of this manual, on the adhesive connection label on page 11 and in the wiring diagram.

    2.10 GRILL ASSEMBLY The assembly of the grills is a simple and intuitive operation: - insert the R and L supporting grills (Fig. 5 Pos. A) on the specially designed fasteners (Fig. 1. 5 Pos.     USER INSTRUCTIONS COMMISSIONING CAUTION: For supervised operation only. After positioning and connecting the oven, the inside is to be cleaned thoroughly. Spray the inside of the oven with a specific degreasing product (make sure not to use products that can leave residues that smell in the oven). Select the ”convection” function, a temperature of 90°C and a humidity of 40%, then operate the oven for 30÷40 minutes.

    USING AND PROGRAMMING THE ELECTRONIC OVEN IMPORTANT: Inserting electrically the omnipolar switch at the head of the appliance, the oven carries out a self-diagnosis by turning on all the leds and all the displays present on the control panel.     4.3.3 DISPLAY AND MODIFICATION OF THE BAKING PARAMETERS Each symbol indicates on the display a set value or a measured value in the baking area. In order to modify a value or parameter, choose the desired row with the selection button The indicator lights up, confirm and modify the settings with the adjustment button.

    4.4.3 CORE PROBE Enable the relevant key and the temperature value of the roasting-meter shall replace that of the baking time. (default setting 60°C) Choose a roasting-meter cooking temperature with the value setting button. Enable the START/STOP key to start the baking (after starting, you can display the baking time left by enabling the following key The baking ends when the temperature set for the core probe is reached.

    AUTOMATIC OPERATION: PROGRAMMING The oven allows to save baking cycles, grouped in programs. Each program consists of maximum 10 phases and contains all the data required for a baking operation. When you start a multi-phase program, the oven stops working at the end of the last cycle. You can set and store 99 programs with maximum 10 phases.

    SPECIAL OPERATIONS 4.7.1 FILLING THE STEAM GENERATOR The steam generator is filled as soon as a mode or a baking program is selected.   • Page 19 Alarm 4 Faulty turbines This delayed 7.5 amp fuse protects the motors; if it is stopped 20 seconds after starting the motor, the alarm shows an error. The convection heating is cut off. The steam mode can be used. Alarm 5 Heating elimination (only electrical) If the equipment is connected to an energy management system and such system cuts off the equipment, the alarm shows an error.

    REPLACING THE MOST IMPORTANT COMPONENTS CAUTION: Have this done by a skilled technician only! Disconnect the electricity and water supplies. Follow the wiring diagram. A) Electric components and electronic card All the electric components and the electronic card are on the right-hand side of the oven. In order to replace them, you therefore need to take off the right-hand side panel.

    SAFETY DEVICES CONTROL AND SAFETY SYSTEMS OF THE OVEN - PROTECTION OF THE AUXILIARY ELECTRIC CIRCUIT. Controlled by a fuse (6.3 A) on the auxiliary circuit line. - MOTOR-DRIVEN FAN PROTECTION The motor-driven fan has an internal overload switch that automatically trips if the windings overheat. Reset is automatic when normal temperature returns.
