Once the hour is up, it is time to chill the wort. Attach chiller to a cold water source
by spray or soak with a contact time of at least 2 minutes. Empty or drain the vessel and let air dry. All parts and equipment should be reassembled wet after soak
to minimize contamination. Let air dry. (Local state health departments may require a potable water rinse after using all chemicals.) and cool the wort. Cool until wort reaches pitching temp. 65-90°F (18-32 °C)
