Preparatory work for cleaning

Cleaning the large steel cooking field
. Clean the large steel cooking field with water, some washing up liquid and a stainless steel,
spiral sponge.
. Heavy soiling or signs of rusting must be removed from the large steel cooking surface with
an abrasive cleaner.
. Rinse the cleaned surfaces with a clean, damp dish cloth, without the use of a cleaning
agent. Then thoroughly rub the surfaces dry.
. Clean the collection groove and the drain pipe.
Risk of burns. If the Gastronorm container is filled with hot liquid: there is a danger that
hot liquid will spill over when it is moved.
. Empty and clean the Gastronorm container.
. Dry the large steel cooking field by briefly warming it up.
. Only when the appliance is not to be used for a longer period: Thinly spread cooking oil/fat
over the large steel cooking field. Let the oil/fat burn in at approx. 200 °C (rotary switch set
to 5) for about 10 minutes.
. During the heating process, turn on the extractor hood or ensure that the room is well ventil
ated.

Cleaning stainless steel surfaces
. If aggressive cleansers have been used, thoroughly wipe down the cleaned components and
surfaces with a clean, damp dish cloth, without the use of a cleaning agent.
. Clean stainless steel surfaces with a fat dissolving cleaner or a special stainless steel
cleaner.
. Rub cleaned parts and surfaces dry with a soft cloth.
