Citrus yoghurt flan
Serves 6-8
Pastry
1 cup/150g plain flour
2 tablespoons finely ground almonds
1 tablespoon sugar
3 tablespoons/60g butter, softened
1
cup/60ml lime or lemon juice

cup/200ml natural yoghurt

cup yoghurt cheese
4
2 tablespoons honey
2 x 60g eggs
Finely grated rind of 1 orange
Juice of 1 orange
Topping
1 cup sugar
1
cup/125ml water

1 small orange, finely sliced and seeds removed
1 small lime, finely sliced and seeds removed
1. Combine flour, almonds and sugar, rub in butter
until mixture resembles breadcrumbs. Stir in
sufficient lime juice until the dough comes
together. Form dough into a ball, cover with plastic
wrap and refrigerate for 30 minutes before use.
2. Roll pastry into a round to fit the base and sides of
a 20cm flan pan. Prick pastry with a fork and bake
at 180ºC for 10 minutes. Cool.

3. Beat yoghurt, cheese, honey and eggs until
smooth. Fold in rind and juice.
4. Pour mixture into prepared pastry case and bake
at 180ºC for 20-30 minutes or until set.
5. Combine sugar and water in a small frypan, bring
to the boil and simmer uncovered for 10 minutes
or until mixture turns a light golden colour. Add
orange and lime slices and cook in the syrup for
10-15 minutes or until lightly caramelised.
6. Remove flan from oven and place onto a cooling
rack. Arrange caramelised slices over top of hot
flan. Allow flan to cool before removing from pan.
7. Serve flan sliced with sweetened yoghurt.
