    Choose newer knives when grinding with the diamond grinding wheel. The first time the knife is ground in SharpX, more grindings are required until the knife edge is in the correct shape. Knives, which have been grinded many times on other systems, usually have a knife edge that has different grinding angles as well as an edge that is not centered.
