To brown or crisp food

^ Raise the browning unit.
^ Place the dish containing food to be
browned on the standing surface.
^ Lower the browning unit until the
distance between the food and the
heating element is approx. 3-5 cm.
^ Turn the right-hand control to setting
"12". Make sure that the control is
exactly positioned at the "12".
The food will be browned in 3-5
minutes, depending on how brown or
crisp you would like it to be.
Only one dish of food can be
browned at a time.

Keeping food warm

Dishes can be kept warm for a few
minutes under the Salamander, i.e.
when it is plated up, shortly before it is
being served (as per the use of
infra-red heat lamps as part of a
restaurant pass between kitchen and
service).
^ Raise the browning unit.
^ Place the dish containing food to be
browned on the standing surface.
^ Lower the browning unit until the
distance between the food and the
heating element is approx. 10 cm.
^ Turn the right-hand control to a
medium setting.
Please note, if food is kept warm
under the Salamander for an
extended period of time, food may
dry out. To keep food warm for an
extended period of time, Miele
recommends the use of a Miele ESW
food warmer. Please contact Miele
for details.

Useful tips

– The Salamander is perfect for
browning and crisping food topped
with cheese (e.g. meat and pasta
dishes, croque monsieur, vegetable
gratin) and caramelised sweet
dishes such as crème brûlée.
The Salamander cannot be used to
re-heat food.

After use

^ Switch off the appliance.
^ Clean the grill after each use while it
is still warm to the touch (see
"Cleaning and care").
^ Do not lower the browning unit until
the residual heat indicator has gone
out.
