Griddle/Simmer Plate
1. Afterusing the griddle,always remove the drippanlocatedbelowit
by pullingthedrip pantowardyou. Thedrippanneeds to be
cleaned aftereachuseofthe griddle. Cooked-off grease will drain
fromthe griddlethroughthedraintubeandaccumulate i nthe drip
pan. Wash in hotsoapy wateror withanantibacterial cleaner. T he
drip panneeds to becleaned aftereachuse. If grease is permitted
to accumulate, fire hazard couldoccur, s incethegriddleburners are
directlyabove the pan.
2. Rubthe surface of a hotgriddlewithunsalted solidshortening,
vegetable oil or sprayit witha non-stick c ooking spray.Thoroughly
wipeit witha burlapor another roughclothto remove food
particles andotherresidue.
3. Stubborn spotsmaybe removed by rubbingthesurface witha
rough grainednylonscrubbing padwithcooking oil. If necessary,
flushthe surface of a warmgriddle(200°F/73°C) withclubsodaand
wipeoverentiresurface witha papertowel. Coatlightlywith
cookingoil.
4. Special griddlecleaners a recommercially available whichmaybe
usedto remove heavy soilbuild-up.Follow manufacturer's
directions exactly.Rinse the griddlewitha vinegar a ndwater
solutionafterusing thesecleaners, rinsewithclearwater, d ry and
coatlightlywithcookingoil. Usegriddlestones onlywhen
absolutely n ecessary andthenwithextreme caution.Wipeaway
anygriddle-stone d ustandfood particles andcoatlightlywith
cookingoil.
5. Using hotsoapy waterto clean the griddlewill remove thecooked-
in seasoning a ndwill require re-seasoning bycoatinglightlywith
cookingoil.
6. Never f looda hot griddlewithcoldwater!Thispromotes g riddle
warping andcancause the griddleplateto crack if continued overa
periodof time.

Grill
Thegrillgratemaybecleaned immediately a ftercookingiscomplete
andbeforeturningoff theflame. Wearing a barbecue mittto protect
yourhandfromheat,usea softbristlebarbecue brushto scrubthe grill
grate. Dipthe brush frequently in a bowlofwater.Steam iscreated as
thewatercontacts the hot grate. Thesteam assists t hecleaning
process b y softening thefood particles.Forthoroughcleaning of the
grill grate,soak15to 30minutes in a hotwateranddetergent s olution.
Aftersoaking, scrubwitha softscotchbriteTM p ad. DONOTUSE a
steelwoolpador abrasive cleaners. T heycoulddamage the porcelain
finish.Todisassemble forthoroughcleaning, remove partsafterthey
havecooledin thefollowing order:
