Definition
Arcing

Covers hold in moisture, allow for more even heaung and reduce cooking ume. Venting plastic

Shielding
In a regular oven, you shield chicken breasts or baked foods to prevent over-browning. When
microwm4ng, you use small strips of fbil to shield thin parts, such as the tips of wings and legs on
poult U, which would cook befbre larger parts.
Standing time
When you cook with reg_flar ovens, fbods such as roast.s or cakes are allowed to stand to finish
cooking or to set. Standing time is especially important in microwave cooking. Note that a
microwm_ed cake is not placed on a cooling rack.
Venting
After covering a dish wid_ plastic x,_map, you vent tt_e plastic wrap 13)7 t urning back one corner
so excess steam can escape.
