OPERATING PROCEDURES

Sanitizing

1. Prepare an approved 100 ppm sanitizing solution
(examples: 2-1/2 gal. [9.5 L] of Kay-5
2 gal. [7.6 L] of Stera-Sheen
follow the manufacturer's specifications.
2. Pour the sanitizing solution into the hopper and allow
it to flow into the freezing cylinder.
3. While the solution is flowing into the freezing cylinder,
brush-clean the mix hopper. When cleaning the
hopper, take particular care in brushing the mix-level
sensing probe, mix inlet hole, and air tube.

4. Place the power switch in the Wash position. This will
cause the sanitizing solution in the freezing cylinder
to be agitated. Allow it to agitate for 5 minutes.
5. Place an empty pail beneath the door spout and raise
the draw handle. Draw off all the sanitizing solution.
When the sanitizer stops flowing from the door spout,
lower the draw handle and place the power switch in
the OFF position.
Important! The power switch must not be placed in
the Auto position until all sanitizing solution has been
removed from the freezing cylinder and proper
priming procedures have been completed. Failure to
follow this instruction may result in damage to the
freezing cylinder.
Note:
For a newly sanitized freezer, make sure your
hands are sanitized before continuing with these
instructions.
