Making Sausage
1.
Assembly the Sausage Making Accessory as illustrated below.
2.
Place the Washer on the Worm Drive and Mincer accessory, instead of cutter and
grille.
3.
Fit the Cone onto the Housing, matching the Washer Cone slots with the Housing lug,
and secure it with the Nut.
4.
Prepare the sausage mixture and season to taste.
5.
Soak the sausage skin in warm water to give it elasticity.
6.
Slide the skin onto the Cone, leaving 1/2 inch of overhang.
7.
Place the sausage meat onto the Tray, then turn on the machine to the desired speed.
8.
Using the Pusher, insert the sausage into the Housing funnel until the sausage
appears at the end of the Cone. Shut the machine off.
9.
Tie a knot at the skin end, then push the knot back tight against the end of the Cone.
This is to eliminate any pockets of air that may be trapped under the skin.
10. Turn the machine on again, and continue to feed the sausage meat into the funnel
until the skin is full. Shut the machine off.
Note: To avoid over stretching of the skin, do not make the sausage meat too fatty.
11. Remove the skin end from the Cone and tie a knot.
12. Make the sausages into the desired length by pinching and twisting the skin where
needed.
