CHOCOLATE NUT WAFFLES
Use the Basic Waffle Mix
Plus 50g chopped nuts
50g cocoa
Mix the ingredients as the Basic Waffle mix and combine the chopped nuts
and cocoa and mix together. You may prefer to add 2 tbsp extra of sugar to
sweeten the taste.
Pour the batter onto the waffle iron (average of 1 tbsp per triangular waffle).
Cook for an average of 2-3 minutes on heat setting 4.
If the mixture sticks to the irons cook for an extra 1-2 minutes.

BELGIAN WAFFLES

100g plain flour
3 tbsp sugar
1tsp cinnamon
2 tsp baking powder
4 tbsp butter (melted)
4 eggs
2 tbsp rum
Separate the egg yolks from the whites. Beat the egg whites until stiff and set
aside. Beat the egg yolks and mix with the flour, sugar, cinnamon, baking
powder and rum. Mix in the melted butter (after the butter has cooled) very
slowly. Fold in the stiffly beaten egg whites.
Pour the batter onto the waffle iron (average of 1 tbsp per triangular waffle).
Cook for an average of 2-3 minutes on heat setting 4.
If the mixture sticks to the irons cook for an extra 1-2 minutes.
