Using Your Electric Knife
Sharpener to Sharpen Knives

Place the Knife Sharpener on a smooth level surface that allows the
Suction Feet to stick to the surface. Make sure the On/Off Switch is
facing you.

Plug the Knife Sharpener into the wall outlet.
Your Knife Sharpener has two stages as identified by the markings 1

and 2 on top of the Housing.
Stage 1: recreates the angled cutting edge of the knife
Stage 2: hones the knife and creates a razor sharp edge
Note: Always start with Stage 1 before proceeding to Stage 2.

Each stage has two slots to sharpen both sides of the blade. When
sharpening, hold the knife so that the blade is resting against the
angled side of the applicable stage slot. For example, when sharpening
in Stage 1, hold the knife against the left side of Slot A and the right
side of Slot B. Repeat in the same manner for Stage 2, Slots C & D.

Begin by making three passes through each slot. (A pass is defined as
one draw though each slot). Always pull the knife towards you through
the slot; do not push the knife away from you. If necessary, repeat the
process until desired sharpness is achieved.
As a general rule, allow one second for each two inches of blade. Pull

the knife through in one steady movement and never hold the blade in
one place against the stone while sharpening as this can damage the
cutting edge and the sharpener.

Do not apply downward force when drawing the blade through.
Steady, light pressure is all that is needed to sharpen the knives.
Begin the sharpening process from the handle end first and draw it

through the slot. To sharpen the tip of the blade, lift the handle of the
knife up when reaching the end of the blade.
Note: It is normal to occasionally see sparks when sharpening knives,
especially knives that have a high carbon content.
When finished sharpening the knife, wipe the blade and the counter

surface with a damp cloth to remove any residual metal filings.
