FORWORD Handbook Instructions This handbook is edited and compiled in accordance with community directions of safety standards on free circulation of industrial products within EU (CE). Purpose This handbook is edited while taking needs of users into due account. Topics regarding proper operation and ensuring long-term and stable running of the machine in different areas and conditions have been illustrated.
-Electrical diagram: A diagram of wiring connections posted on the machine electrical box. _________________________________________________________________ CAUTION Before operating the machine, please read this handbook carefully and pay attention to all safety instructions. _________________________________________________________________ SAFETY Any operator should be aware of that, when using industrial equipment or devices, rotary motor, driving system, high voltage components as well as high temperature parts may cause serious damages to persons.
CAUTION One must be aware that the staff does not carry out any operation out of its own sphere of knowledge and responsibility. _________________________________________________________________ NOTE According to the current standard, a technician should have the following characteristics: - well-trained with experience and knowhow. - familiar with principle and prescriptions, capable to take accident prevention.
contact the distributors, designated service providers or service department from H&M. Security Protection Symbol means that the user must pay extra attention to prevent risk during operation and increase the awareness of personal protection. CAUTIONS Choose a circuit breaker with same specifications according to the nameplate on the machine and install it to the power supply line when conduct with the installation.
CHAPTER 1. RECEIVING, MOVING, UNPACKING 1.1 Precautions On Receiving Before unpacking the machine, check the package to observe if any external damages caused by hitting or capsizing during transportation. An external damage could mean the machine itself might have been damaged already.
1.2 Unpacking Two kinds of material for package: Wood or corrugated case Wooden package: Bottom part of the machine will be fixed on a wooden base, while the four sides will be nailed by four pieces of wooden board. Wear gloves and use proper tools when opening the wooden package so as to prevent any scratch by debris of wood or nails.

H&M reserves the copyright of this handbook. 2.2 Information About the Machine 2.2.1 General Information The combination machine of mix boiler and batch freezer M5C, M10C are designed for professional purpose, good for making Italian ice cream, gelato, gourmet ice cream, sorbet, frozen custard and water ice.
2.2.2 Machine Lay-out NOTE Dimension may be various depending on type of condensation. Dimension (mm) Model Width (W) Depth (D) Height (H) HM5C HM10C 1200 HM15C 1430 2.2.3 Technical Features Minimum Maximum Power Water Gross MODEL Capacity Installed power Input...
2.4 Noise The noise is less than 70 dB for both water cooling and air cooling system while the machine is operated under requested working condition. CHAPTER 3 INSTALLATION 3.1 Position After the machine is positioned, lock the caster immediately to prevent movement of the machine during working.
NOTE Insufficient air circulation affects both machine working and its performance. 3.3 Installation of Water-cooled Machine The inlet and outlet pipes of cooling water must be properly installed before operating the machine. The requirements for the cooling water are: Pure and no debris; ...
3.4 Electrical Connection Before connecting the machine to the power mains, check power information indicated on nameplate and choose a suitable power supply to the machine. Get a circuit breaker protection device according to the parameters on nameplate and install it to the power supply circuit during installation. The specifications of the wires should strictly follow the requirements of the machine and the minimum diameter is no less than 3 mm.
Safety devices can neither be removed nor modified. Periodical maintenance required. Original components from manufacturer must be used in machine maintenance or repair, especially, the components or spare parts related to the safety of the machine. (Gas pressure switch, thermostat, sensor and magnetic switch, ect ) It is necessary to follow the items here below: -An instruction handbook of machine should be available at working site for easy reference at any time.

CHAPTER 5 CONTROLS AND OPERATION 5.1 Some Specified Concepts There are some concept to be specified to understand this chapter well. STANDBY MODE The machine will enter STANDBY MODE after the power is connected. The power indicator keeps blinking under this mode and the display screen doesn't show anything.
5.4 PASTEURIZING AREA 5.4.1 Display Screen It dynamically shows the statues of machine. Ready Ready mode, Cooking ..55 C TO 85 C Cooking mode, Waiting ..Cooking finished, It displays the parameters during the setting program. It displays the error message when the machine detects an error. 5.4.2 Increase and Decrease Key Push , increase volume.
Push key will perform a pasteurizing process. You can push to terminate the process. _________________________________________________________________ CAUTION It is prohibited to run the pasteurizing process with no or less mix(less than minimum limited, this could seriously damage machine. _________________________________________________________________ 5.4.5 STOP/Page Down Key Push will terminate a processing.
UP_T : 85 S p e e d = L Heat : 90 Push key to page down (move the cursor). Push key to change the volume of a parameter. Push key to save and exit. _________________________________________________________________ CAUTION Read this manual carefully is requested before you try to modify the parameters. _________________________________________________________________ 5.5.2 Parameters Description and Factory Volume Factory...
Extrude out 69 seconds Speed=L Taking out ice cream, It displays the parameters during the setting program. It displays the error message when the machine detects an error. 5.6.2 Increase and Decrease Key Under STANDBY MODE, push both keys at same time will enter parameters setting mode.
NOTE RINSE is used to clean the cylinder or blend the mix before making ice cream. 5.6.5 Freeze with High-speed blending, Freeze with Low-speed blending, is for making low overrun products and is for high overrun. The motor will agitate and the compressor will start freezing. The screen dynamiclly shows the status including ice cream hardness, target hardness, timer and motor agitating speed.
High agitation speed can help extruding out product quickly and thoroughly. Low agitation speed can give the chef longer time to decorate the ice cream or add ingredients (like juice, nuts or biscuit )into the ice cream. It is better to let the machine always work automatically by properly parameters setting.
Hardness : 1 - 10 Push key to page down (move the cursor). Extrude T : 30 - 240 60 seconds Rinse T : 10 - 120 30 seconds Push key to change the volume of a parameter. Push key to save and exit.
CHAPTER 6 FREEZING SYSTEM DIAGRAM Compressor Gas Pressure Switch sensor Freezing cylinder Thermal expansion valve Condenser Separator of oil and liquid Filter CHAPTER 7 HYGIENE The ice cream mix and other food materials are an ideal ground for mildew and bacteria to proliferate to eliminate them, it is necessary to thoroughly wash and clean all parts in contact with the food.
CHAPTER 8 SAFETY DEVICE 8.1 Safety Device Position Independent heater-explosion-proof thermostat and probe. Emergency stop button Motor thermal overload relays (inside of the electrical box) Cylinder door open magnetic sensor Compressor thermal overload relays (inside of the electrical box) Gas pressure switch 8.2 Safety Device Explanation 8.2.1 Emergency stop button It will cut all the power supply after it is pushed.
8.2.3 Anti-over-heated Device (Independent heater-explosion-proof thermostat and probe) It's a thermostat switch with probe. It will be active to cut the electric heating when the MEDIA TEMPERATURE exceeds limit. It's set to 110 ° C. 8.2.4 Compressor Overload Safety Device (Freezing area) It is a Thermal Overload Relay with auto-reset function, responsible for protecting the compressor from overloaded.
8.2.7 Built-in-Timer Controlled Machine Stop Safety Device (Freezing Area) There is a built-in timer in the controller which will stop the compressor if the continues-running time exceeds a certain limit. This timer is programmable. _________________________________________________________________ CAUTION It is prohibited to modify or remove the safety devices! H&M will not be responsible or accept any claim for an accident to people or machine caused by modifying or removing safety device.
