Operating principle
The microwaves used for cooking are electromagnetic waves. They are commonly
found in our environment in the form of radio waves, lights and infrared rays. Their
frequency is around 2450MHz range.
Their characteristics:
• they are reflected by metals
• they pass through all other materials
• they are absorbed by the molecules of water, fat and sugar.
When food is exposed to microwaves, their molecules start to move quickly, which
makes food heat up.
Microwaves can penetrate about 2.5 cm into food.
If the food is thicker, the inaccessible parts are cooked thanks to the transmission of
heat, similar to conventional cooking.
