General Carefully read the instructions in this manual as they contain important information re- garding proper, efficient and safe installation, use and maintenance of the appliance. Keep this manual in a safe place for eventual use by other operators of the appliance. 25.3.2003 Rev. 2.4 Safety 2.5 Washing and cleaning of the machine The machine performs final rinse with 85° C hot water. The hood must not be opened until the final rinse is finished. If the machine is equipped with automatic hood lift be careful not to get steam on your face when the hood is lifting.

Functional Description 3.1 Application of the appliance The machine is intended for washing items used for the preparation and serving of food, including various types of items used for the storage of food. Washing must therefore be carried out with a machine dishwashing detergent and rinse aid suitable for this purpose.

25.3.2003 Rev. 2.4 Operation [Hood lift function (only MM5-SA, demands an auxiluary relay card: 5210804] • [The booster pump of the hood lift is activated after the end of the wash cycle for 1 second, then it keeps a steam exhaust pause of 3 seconds and after that runs con- tinuously for 7 seconds.] Detergent for manual dishwashing must not be used in the machine or for soaking purpos- es as it builds foam and gives poorer wash results.

25.3.2003 Rev. 2.4 Installation Make sure that the machine stands horizontally. Adjust, if necessary, with the aid of the legs of the machine. Connect the warm water. The connection shall be equipped with a stop cock, vacuum valve and non-return valve. 5.3.3 Drain connection [MM5] See the installation drawing and technical specifications.
25.3.2003 Rev. 2.4 Installation 5.4.1 First-run Preparations Check that the strainers and the overflow pipe are in their correct positions. Check also that the detergent and rinse aid hoses are connected to their respective containers. The thicker hose is connected to the detergent container. Open the stop cock. Rotation direction of the pump motor The rotation direction can be seen by checking the shaft between the pump and motor, while the contactor is pressed for a short time.
