Filling and topping will be domed in frypan, but will cook down throughout baking.

METHOD 1. Preheat oven to 375°F. 2. Place potatoes in the Curtis Stone Sauteuse Pan and add enough cold salted water to cover by 1 inch. Bring water to simmer over high heat, then reduce heat to medium, and simmer 15 minutes, or until potatoes are tender. Drain potatoes well.

METHOD 1. Preheat oven to 300°F. 2. Place the Curtis Stone Sauteuse Pan over medium-high heat. Season beef with salt and pepper. Dust beef with flour, shaking off any excess. Heat oil in pan and add beef. Sear beef on all sides 10 to 12 minutes in total, or until browned all over.
