Cooking Poultrg: General Directions
Preporethe poultry for cooking.
- Defrost completely.
- Arronge poultry pieces with thicker pieces
ot the outside edge of the boking dish.
When cooking legs, orronge them like
the spokes of o wheel.
- Cover the boking dish with woxed poper
to reduce spottering.
- Use o browning ogent or cook with o
souce to give o browned oppeoronce.
Wotch the poultry os it cooks.
- Droin ond discord juices os they
occumulote.
- Shieldthin or bony pieces with smoll strips
of oluminum foil to prevent overcooking.
Keep foil et leest 1 inch from the oven
wolls ond other pieces of foil.
Poultry is done when it is no longer pink
ond the juices run cleor.When done,
the temperoture in the thigh meot
should be 180-185°R
Let the poultry stond offer cooking covered
with foil for 10 minutes.

ond seosonings if desired. Cook until no longer pink ond
juices run cleor. Remove the hens from the microwove oven
when they reoch the desired temperoture. Let stond covered
with foil 5 minutes. (The temperoture moy rise obout 10°F.)
The temperoture in the breost should be 170°F before
serving.
