How to Set the Upper Oven for Baking or Roasting

Preheating and Pan Placement
Preheat the oven if' the recipe calls fi)r it.
To preheat, set tile oven at tile correct
temi)erature. Preheating is necessary
when convection baking and for good
results when baking cakes, cookies, pastry
and breads.
Forovens withouta preheatindicator lightor tone,
preheat7 minutes.
Baking results will be better if baking pans
are centered in tile ()veil as ii/uch as
possible. Pans should not much each other
or the walls of the oven. If vou need to use
two shelves, stagger the pans so one is not
directly above the other; and leave
ai)i)ro_mately 11/-,"between pans, fl'om
the fl'ont, back and sides ot the wall.
Aluminum Foil
Do not use aiuminum foi/ on the bottom of
the oven.
Never entirely cover a shelf with ahllllinull/
toil. This will distm'b the heat circulation
and result in poor baking.
A smaller sheet of fi)il may be used to catch
a spillover by plating it on a lower shelf
several inches below the fi)od.
Oven Moisture
