National dishes / French
Vegetable bake
Serves 6 -8
4 cloves of garlic
1 kg aubergines
1 kg courgettes
1 kg tomatoes
200 ml olive oil
2 onions
1 bunch rosemary
1 bunch thyme
Method:
1. Wash the vegetables. Cut the
tomatoes, courgettes and aubergines
into 1 cm thick slices. Peel the garlic
cloves and onions. Slice the garlic
finely, keeping one clove for later. Chop
the onions finely.
2. Heat the olive oil in a pan. Fry the
onions lightly in the oil.
3. Rub a roasting dish with the
remaining garlic clove, and scatter the
fried onions in the bottom.
4. Arrange the courgettes, tomatoes
and aubergines in the dish.
5. Drizzle with olive oil and chopped
garlic, thyme and rosemary.
