Cheese soufflé
Serves 4
(for 1 large soufflé dish C 20 cm or 4 C
8 cm soufflé dishes or ramekins)
80 g butter
80 g flour
750 ml milk
200 g Gruyère cheese
6 eggs
Salt and pepper
Method:
1. Prepare a Béchamel sauce using the
butter, flour and 500 ml milk as follows.
Melt the butter in a pan, and stir in the
flour. Over a low heat, add the milk little
by little, stirring all the time.
2. Bring the rest of the milk to the boil in
a separate pan, and then add to the
Béchamel sauce, stirring for a few
minutes until the sauce is smooth.
3. Stir in the grated Gruyère cheese.
4. Separate the eggs. Beat the egg
yolks into the cooled sauce. In a clean
bowl, beat the egg whites until stiff, and
fold them gently into the sauce.
5. Brush the dish(es) with oil, pour in
the mixture and place in the oven.
