DESCRIPTION SECTION 1 DESCRIPTION I. MODEL IDENTIFICATION The Middleby Marshall PS724-Series may be used either as a single oven or stacked for use as double or triple ovens. A single PS724-Series Oven (Figure 1-1) can be mounted on an insulated base with short legs for countertop use, or on a leg stand with a lower shelf and casters for a free standing unit.

SECTION 3 OPERATION IV. NORMAL OPERATION - STEP-BY-STEP Wait for the oven to heat to the setpoint temperature. Higher setpoint temperatures will require a longer wait. Do NOT service the oven while it is warm. Turn off the electric supply circuit breaker(s) and disconnect the electric supply to the oven. When all cleaning and servicing is complete: If the oven was moved for servicing, return the oven to its original location.
