Mulled coffee
Serves 4

50 cl strong coffee
•
50 cl apple juice
•
2 tbsp demerara sugar
•
3 finely-sliced oranges
•
2 small cinnamon sticks
•
Pinch of mixed spice
•
1 clove
Bring all the ingredients to a boil over a moderate heat, turn the heat down and leave to
simmer for 10 minutes. Strain the liquid through a conical sieve into cups which have been
rinsed in hot water.
Coffee milkshak
Serves 2

20 cl cold coffee
•
30 cl milk
•
2 scoops vanilla ice cream
Blend all the ingredients in a food processor to obtain a creamy mixture.
Cognac-laced coffee *
Serves 2

20 cl strong coffee
•
2 tbsp cognac
•
Single cream
•
Vanilla-flavoured sugar
•
Crushed ice
Crush the ice in a food processor, then add the coffee, sugar,
cognac and cream. Press the pulse button several times, then
serve the coffee in glasses, adding a little whipped cream
(optional) and decorating with shavings of chocolate.
