Simple Rotisserie Chicken
1. Truss and skewer (3 lb.) whole chicken.
2. Coat generously with preferred dry rub.
3. Cook on the rotisserie setting at 350°F for 18-22 minutes per
pound (approximately 1 hr). The chicken should reach an internal
temperature of 165°F.
4. Carefully remove from oven, following directions on page 13.
5. Let rest for 10 minutes before serving.
Brazilian Rotisserie Pineapple
INGREDIENTS:
• 1 whole pineapple, peeled
• 1-1/2 cups granulated sugar
• 1 Tbsp ground cinnamon
1. Skewer the pineapple.
2. Whisk together sugar and cinnamon.
3. Roll pineapple in the cinnamon sugar mixture, coating well.
4. Place skewered pineapple in the oven according to the directions
on page 12.
5. Cook on rotisserie setting at
20-30 minutes.
6.
Carefully remove from oven, slice thinly and serve immediately.
