The Grind (for espresso machines)
When the grind is too fine (feels
powdery like flour and tends to clump
together when compressed), there is no
space between the grinds for water to
pass through. Not only can this block the
Dual Wall Filter, but the espresso will be
over-extracted, dark and bitter.
When the grind is too coarse (feels
like granulated sugar), water will pass
through the grinds too quickly, resulting
in espresso that is under-extracted and
lacking flavor.
The perfect espresso grind will produce
a layer of caramel colored crema that
floats on top of the espresso following
extraction. The grind should feels like
fine sand. When rubbed between your
fingertips it will slightly stain them while
keeping its granular consistency.
