Lubricate the O-Rings on the draw valves. Insert the draw valves from the top of the door assembly, making sure the H-Ring middle draw valve is in the middle position (in positions 2 and 4 of a 5 handle). The H-Ring valve always goes where the twisted ice-cream will be served from.

Right Wrong Attach 1st nut to the end of the retention pin. Starting at one end, thread the retention pin through the door assembly, inserting the handles (placed in screw side down) into the holes on the draw valves and threading the retention pin through each handle until all handles are installed.

The door gasket has a flat side and a ridged side. Place a small amount of lubricant on the ridged side and rub around the entire gasket. Place over the beater guide ridged side down and press into place. Put another small amount of lubricant onto the flat side of the gasket and spread evenly around the gasket.
