Saddle of lamb (low temperature cooking)

Preparation time: 60 minutes
Serves 4
Ingredients
1 tbsp. oil
1 tsp. salt
Pepper
3 loins of lamb (300 g each), ready to
cook
Accessories
Rack
Glass tray
Food probe
Preparation
Place the rack on the glass tray and
place in the oven. Start the Automatic
programme or pre-heat the oven for
10 minutes using the settings indicated
for cooking stage 1.
Mix the oil with the salt and pepper;
then coat the loins of lamb with it.
Heat the oil in a pan. Sear the loins of
lamb all over (approx. 1 minute per
side).
Remove the loins of lamb from the pan
and insert the food probe.
Manual:
Adjust settings as indicated for cooking
stage 2.
Place the loins of lamb on the rack and
cook.
